In this process, the cherry fruits, after being peeled and separated from the green beans, have all the mucilage removed, through controlled fermentation. The mucilage is nothing more than remains of organic materials that are deposited on the surface of the grains after the passage through the peelers. After fermentation, the beans are washed and taken for sun drying and in mechanical dryers.
